This pudding can be sickly-sweet, but Latifa avoids this by including orange zest and fragrant orange-blossom water. It makes great comfort food after a light meal.

Ingredients

  • 100 g ( oz) short-grain rice, rinsed
  • 500 ml (18

Method

  1. Put the rice in a saucepan and cover generously with water. Cook until the water has been absorbed. Add the milk, raisins, orange zest, salt and sugar, and bring to the boil, stirring continuously. Add the orange-blossom water.
