Caramelized onions and a pinch of sweet baby spinach give these breakfast sandwiches color, texture, and memorable flavor. We like to use thin slices of Black Forest ham, but you can trade them out for prosciutto or crisp bacon, or leave out the meat completely for a tasty vegetarian option.

Ingredients

  • 3 large eggs
  • 1 tablespoon milk
  • Kosher salt and freshly ground pepper

Method

Preheat the oven to 350°F.

While the oven heats, in a bowl, whisk together the eggs and milk, then season with salt and pepper. Set aside.

Arrange the croissants on half of a sheet pan and the ham on the other half of the pan. Place in the oven until warmed, about 5 min
