Method

  1. Prepare special biscuit sponge.
  2. When sponge is done and cooled, peel away the layer of brown skin on the top. Place an 18 x 18-cm square cake ring on cake and cut out an 18-cm square piece. Leave cake in cake ring and cover bottom of cake ring with cling film and a stainless steel tray.
