Summer is the time to enjoy Pastis, the potent anise-tinged beverage that’s a favorite around the Mediterranean. Most people drink it diluted with ice water; it goes down easily in sweltering weather. I like it just fine, but for a refreshing aperitif with a bit of spritz, I make a Pastis-flavored syrup and add it to a glass of sparkling Prosecco or cava.
