Eggs Florentine is the kind of retro, swanky dish I imagine my grandparents ate for brunch at the Breakers Hotel in the ’80s. Traditionally, eggs Florentine includes sautéed spinach with a poached egg and hollandaise sauce, which can be delicious though a bit fussy.
