Eggs Florentine is the kind of retro, swanky dish I imagine my grandparents ate for brunch at the Breakers Hotel in the ’80s. Traditionally, eggs Florentine includes sautéed spinach with a poached egg and hollandaise sauce, which can be delicious though a bit fussy. Since most of us don’t feel like whisking melted butter slowly into hot egg yolks (careful or they’ll scramble!) to make hollandaise for a weeknight meal, I came up with an easier way.
