This simple recipe goes well with the Maple Syrup and Walnut Biscuits, Griddled Scones with summer fruits and cream, or any other home-made biscuits.

Ingredients

  • 2 whole lemons (including pith and peel), chopped
  • 4 tablespoons caster sugar
  • 1 pint

Method

Blitz all the ingredients in a blender until the lemon is puréed and then push through a sieve. To serve, simply pour on ice.
