Method

Heat the oil in a heavy-based saucepan over medium heat for about 1 minute. Add the pumpkin and sugar, increase the heat to high and stir to combine. Continue to stir for about 10 minutes, or until the pumpkin releases moisture; the liquid will help to further cook and soften the pumpkin.
