Aush is a traditional thick soup including various seasonal vegetables and hand-rolled, knife-cut noodles, revealing the Chinese and Mongolian influences on Afghan cuisine. The noodles take time to prepare and, like maashawah soup, aush was a dish made occasionally and communally with family and friends.
