Calzone means pair of trousers! It is a sort of folded pizza, rather like a pasty, and is particularly delicious if you include lots of cheese so the molten cheese spills out when you cut into it. You can vary the fillings to your own taste - try mozzarella, salami or vegetables.

Knock back the risen dough, roll it out thinly on a floured surface and cut out eight 15 cm (6 in) rounds.
