Calzone means pair of trousers! It is a sort of folded pizza, rather like a pasty, and is particularly delicious if you include lots of cheese so the molten cheese spills out when you cut into it. You can vary the fillings to your own taste - try mozzarella, salami or vegetables.



Knock back the risen dough, roll it out thinly on a floured surface and cut out eight 15 cm (6 in) rounds.

Mix together the ricotta, garlic, olive oil, Bel Paese and chopped mortadella or prosciutto and season to taste. Put the mixture on one half of each round of dough, leaving a border. Brush the edges of the dough with beaten egg and fold over to make turnovers. Crimp the edges for a
