Made with Neufchâtel cheese, this delicate, sweet version of croque monsieur is not unlike pain perdu, or French toast. Although it can be served for dessert, it also makes a good brunch dish or summer breakfast. Neufchâtel is a creamy, fresh-tasting cheese from Normandy, best eaten young.

Ingredients

  • 90 g (3 ½ oz, scant ½ cup) Neufchâtel

Method

Mix together the Neufchâtel, Grand Marnier, orange zest and 1 tablespoon of the sugar. Spread this mixture evenly over the slices of brioche. Top 4 slices with the raspberries, packing them tightly into the cheese, then sandwich together with the remaining brioche.
