Hash browns is the American name for crisp fried potatoes. Outside America they tend to be made with grated cooked potato. Americans, however, prefer more rustic diced potatoes. In this recipe I use them as part of a great sandwich with Cypriot cheese.

Ingredients

  • 450 g (1 lb) floury potatoes
  • 1 red onion, chopped

Method

Put the unpeeled potatoes in a pan, cover with cold water, add a little salt and bring to the boil. Reduce the heat and simmer until tender, then drain and leave to cool. Peel the potatoes and cut them into 1cm (½ in) dice. Place in a bowl, add the onion, oregano, garlic and olives, then season with salt and pepper.

Whisk together all the ingredients for the dressing and season to taste
