Courgettes are now available all year round. Buy hard, shiny courgettes, neither too small – because small courgettes have not fully developed their flavour – nor too big – because the big ones are full of seeds. The leeks should be thin and with fresh-looking green tops. The combination of these vegetables, both rather sweet, is sharpened by a glassful of wine. The sauce is an interesting and well balanced mixture of different flavours.
