I wonder if the creator of this recipe, Salvatore Cascino, is a fan of the operas of George Frideric Handel. Signor Cascino, who cooks at the Ristorante La Botte in Monreale, Sicily, has named his dish after 2 of Handel’s great operas. Rinaldo received its first performance on February 24, 1711 (the composer’s twenty-sixth birthday) at the Queen’s Theatre in London.
