The simplest of table sauces in Mexican cuisine; every family has their own particular favourite. It is fresh-tasting and extremely moreish. Salsas are a great time-saver in the kitchen: incredibly easy to make, and perfect with eggs, beans, tortilla chips, shellfish and poultry dishes. For utmost freshness, don’t make them too far in advance, and use them as soon as possible after they have infused. The red chillies can be replaced with green or yellow varieties.
