I first encountered this bizarrely named sauce many years ago at the famous La Sammana Resort Hotel on the island of St Maarten in the Caribbean. The chef served it spooned over grilled fish and vegetables, but never could tell me how it got its name! My research since then suggests that it is named after the numerous packs of wild dogs that roam the island. In essence it is similar to a French vinaigrette but with the spirit and character of the French West indies.
