Sriracha is the generic name for the hot sauce adorning every Southeast Asian restaurant table. Like many sauces of the region, it has a perfect balance of sweetness and spice.

Although it started life in a Thai port called Sri Racha, I first encountered the sauce in California, on hot-dog vendor stalls and taco stands, served like a ketchup - the perfect accompaniment! Such is its global popularity now that commercial brands are readily available, but it’s very simple, and much bet
