An extremely versatile sauce, but I love it best with fried rice; it adds an instant flavour burst. It also makes an excellent dipping sauce and goes very with most vegetables, especially green beans or broccoli.

Ingredients

  • 120 g Japanese white sesame seeds (see tip)
  • 1 tablespoon sesame oil

Method

  1. Heat a dry frying pan or wok over a high heat and, when it is almost smoking, add the sesame seeds and fry until golden, keeping the seeds moving to prevent them burning. Transfer to a mortar.
  2. Add both oils and crush the seeds to a paste with a pestle.
