Pap is an old-fashioned word for any food that is soft and purée-like. In this case the pap is served as a relish with poultry, such as cold fried chicken, or as a sauce.

Ingredients

  • 14 ounces (440 g) unripe green apples, peeled and cored (see note)
  • cup

Method

Put the apples, wine, olive oil, mace, sugar, lime zest, and cayenne in a food processor and purée to a smooth, creamy consistency. Serve immediately.
