  • 250 ml apple cider vinegar
  • 55 g sugar

Method

Red cabbage

Heat vinegar, sugar and spices in a large pan over a medium heat, stirring regularly to dissolve the sugar. Once dissolved, remove from heat and cover. Leave to cool overnight to allow the flavours of the pickling liquid to infuse. Core and finely slice the cabbage, mix in the salt and chill overnight. Next day, wash off the salt and dry with a
