White balsamic gel

  • 250 ml white balsamic vinegar
  • 4 g agar

Method

White balsamic gel

Bring the balsamic vinegar to the boil and add the agar, whisking for 2 mins to activate. Cool on a tray in the fridge. When set, blend until a smooth thick gel forms and pass through a fine sieve. Place in a bowl and vacuum (or wrap the bowl in cling film) so the gel is clear. Place in a small piping bag and refrigerate. The gel can be s
