  • 200 g pitted Kalamata olives

Method

Black olive ‘soil’

Pat dry the olives with a cloth. Place on a tray and dehydrate at 70 C overnight in an oven. Allow to cool completely and pulse in a blender until soil like in texture. Do not over blend.
