Bring the milk to 40 C and season. Whisk and add the rennet so it infuses evenly. Pour into serving bowls and keep warm until set (normally takes 2-3 mins). Either use warm or refrigerate and use that day.
Slice the melon in half and then slice on a mandoline at 0.2cm. R
