Plaice

  • 12 fillets
  • Transglutminase for dusting

Method

Plaice

Skin the plaice, clean in iced water and pat dry. Dust with transglutminase powder and roll each fillet from head to tail into a boudin (not too tight). Place in a small container ensuring a snug fit. Refrigerate for 2 hours.

Coco beans

Remove beans from the pod, place in a medium sized pan, cover
