  • 2 carrots, diced
  • 2 shallots, diced
  • 1 white onion, diced

Method

Stage 1

Sweat all vegetables in olive oil until soft.

Stage 2

Add all ingredients (bar langoustine, fish fumet stock, Noilly Prat and lemon juice) to the first preparation and cook on a high heat for 4 mins. Cook out the tomato paste. Add Noilly Prat, flambé. Add langoustine shells. Cover with fish fumet s
