Ingredients

  • 4 shallots, chopped
  • ½ bunch dill
  • ½ bunch tarragon

Method

Sweat down the chopped shallots, dill, tarragon and thyme. Add the white wine vinegar, caster sugar and spices. Bring to the boil and cool down. It vital that the liquor is cool before mixing in the vegetable nage and lemon juice.
