Method

Bring the nage to the boil. Reduce heat and start adding butter and blend. Do not boil or the mixture will break. Continue adding butter until it is emulsified, is a consistent mix and is not split. Adjust butter levels according to whether a thick or thin emulsion is required. Use same day.
