Instead of vegan shortenings with long lists of ingredients and stabilizers, I prefer to use coconut oil. If you don’t mind a distinct coconut flavor, you can use unrefined coconut oil in this recipe, which is nutritionally superior. Otherwise, use refined coconut oil, which won’t impart a noticeable coconut flavor.
