Corn doesn’t contain any gluten, so the bread flour makes up for that in order to make a more cohesive dough. The distinctly corny flavor works well as a stand-in for tamal masa or tortillas in the Chile Verde Pork Pie. It’s also great with summer fruit pies such as peach.
