Method

In a saucepan, scald the milk and cream with the vanilla and half of the sugar. Whisk the egg yolks, remaining sugar, cornflour and flour together until thick. Pour the just-boiled milk and cream onto the yolk mixture while stirring with a whisk. Return the mixture to a clean pan and stir continuously over a moderate heat until it boils.
