These pickled chiles are great on pizza and literally everything. They’d even go great on scrambled eggs. You could serve them with almost any pizza in this book and you’d be doing a good thing. You’re a smart, good-looking person and you’ll look at least 25 percent more attractive with a side of these pickled chiles.

  1. Combine the vinegar, water, salt, sugar, oregano, garlic, and coriander seeds in a small saucepan. Bring to a boil. Place the chiles at the bottom of a plastic container, then top them with the hot liquid and submerge completely.
  2. For crispier pickles, transfer your plastic container to an ice bath and stir the chiles until the liquid is cool (or let cool before
