Classic sausage pizza gets a lift from fresh ripe tomatoes and crunchy shaved fennel. For an extra boost of fennel flavor, look for Italian sausage that includes fennel seeds. Plum tomatoes work well because they aren’t overly watery, but when heirlooms are at their seasonal peak, they make an exceptional substitute.

Ingredients

  • 1 tablespoon extra-virgin olive oil, plus more for brushing
  • ½ cup (50 g) very thinly sliced

Method

Position an oven rack in the middle of the oven and place a pizza stone on the rack. Preheat the oven to 550°F/290°C (or as high as it will go). Once the oven has reached 550°F/290°C, let the stone continue to heat for 15–30 minutes longer, without opening the door.
