Sweet fig jam and fresh juicy figs balance beautifully with thin slices of salty prosciutto and creamy Gorgonzola cheese in this exquisite pizza. A drizzle of aged balsamic is the perfect tangy addition. For a fresh note, add a tangle of baby arugula to the pizza before serving.

Ingredients

  • 3 tablespoons unsalted butter
  • 1 small yellow onion, thinly sliced
  • Kosher salt and freshly ground pepper

Method

Position an oven rack in the middle of the oven and place a pizza stone on the rack. Preheat the oven to 550°F/290°C (or as high as it will go). Once the oven has reached 550°F/290°C, let the stone continue to heat for 15–30 minutes longer, without opening the door.
