Crisp-cooked thin pizza crust is a terrific base for any of the salads in this book. Here, the Caesar salad also makes a great side dish for your favorite pizza. If you like, substitute grilled shrimp or thinly sliced flank steak for the chicken.

Method

Position 2 oven racks in the middle and in the lower third of the oven. Place a pizza stone on the lower rack. Preheat the oven to 375°F/190°C.

Pat the chicken dry and put it on a small baking sheet. Brush with 1 tablespoon of the olive oil and season with salt and pepper.
