I could write a book on the virtues of eating seafood, but let’s just say that it’s very good for you, and the more you eat it, the healthier and happier you'll be. Play around with different sea creatures. In this recipe I’ve simply used shrimp with scallops, finished off perfectly with grated bottarga (cured and salted mullet or tuna caviar).
