These belong to the Aveyronnais vernacular. Save at home I have not eaten them anywhere other than at La Taverne in Rodez, a fine paleolithic restaurant that no longer exists. Philippe Regourd sold it to a tyro. Within months it went into liquidation. This is one of several of M Regourd’s dishes that I have stolen and amended. The quantities are, as usual, approximate.
