  • 3 white or Spanish onions, roughly chopped
  • 2 large carrots, roughly chopped
  • 1 bunch


  1. Combine all ingredients in a large saucepan or small soup pot. Cover with water to reach approximately 2 inches above the vegetables.
  2. Bring to a boil uncovered, then reduce the heat, cover, and simmer for 45 minutes to 1 hour, stirring occasionally.
  3. Drain well, pressing all the liquid out. Discard the solids.
