Most grillers in the Middle East use ready-made za’atar, and in North America you can find it at Middle Eastern markets. Here’s a quick recipe if you want to make your own. It makes a great seasoning for fish and poultry.

Ingredients

  • ¼ cup dried oregano
  • ¼ cup dried marjoram
  • ¼ cup

Method

Combine the oregano, marjoram, thyme, sesame seeds, salt, and sumac, if using, in a mixing bowl and stir to mix. Store in a sealed jar away from heat and light. The za’atar will keep for several months.
