Green just makes us feel better, it’s a colour that represents nature. This soup was created when the cold had hit hard on the boat. My body was craving something deeply nourishing. My grandma called and told me, “Don’t forget green is the colour connected to the heart.”

Ingredients

  • 1 tablespoon olive oil
  • 2 garlic cloves, crushed
  • 3 potatoes, cut into small cubes (

Method

Heat the olive oil in a pan over a medium heat and add the garlic, potatoes, leeks, broccoli and a large pinch of salt. Cook for 5 minutes until the veg starts to sweat and soften.

Pour in the water and the oat milk, add the nutritional yeast, peas, bouillon, ¾ of the parsley leaves and a large pinch of pepper. Cook for 25 minutes until the veg has softened.
