Think of pudlā, also known as cheelā, as a cross between a pancake and a crêpe. They’re naturally gluten-free, as they are made from besan (Bengal gram flour). I like to add kale and broccoli to pudlā to give them a deep green color and the fiber, iron, calcium, and other wonderful nutrients that accompany it. Serve them with green chutney. They can also be a gluten-free alternative to Rotli
