Idadā is a version of dhoklā, which encompasses a family of savory steamed cakes like Khaman. The difference here is that idadā are made from a batter of rice and lentils that’s fermented to give them a subtle tang. This recipe is my mom’s specialty. She tops it with freshly cracked black pepper and ground red chili for extra flavor. The fermentation process requires more patience than effort, so plan for this dish to be a two-day project, but it’s mostly
