Shāhi, which means “royal” in Hindi, is a rich gravy preparation of Mughlai (Moghul) origin. The richness in this recipe comes from a golden-colored shāhi cream made from nuts, cardamom, saffron, and rose water. I pair this gravy with cauliflower that is roasted, charred, and buttery-tender. Feel free to pair it with any of your favorite vegetables, tofu, or chickpeas. Serve with plain rice, Nān, or Parāthā.
