Pāv bhāji is a very popular street food, a stewed vegetable dish (bhāji) served with soft buttered rolls (pāv). The magic in this dish comes from pāv bhāji masālā, a spice blend that is available from Indian grocery stores. To avoid buying too many single-use spice blends, I make my own version with a mix of garam masālā and chāt masālā. If you prefer to use store-bought pāv bhāji masālā, simply omit all the ground spices
