The word “curry” is commonly used outside of India to describe hundreds of different dishes with their own nuances, but “gravy” is the term more commonly used by Indians to describe dishes that consist of a spiced sauce. I’ve included my versions of the gravies that are commonly served in Indian restaurants in the US (e.g., Shāhi Gobi), with modifications that make them fully plant-based but just as rich and hearty as the originals. These gravies can be served with breads, such as Nān, or rice, which are both equally effective at mopping up their comforting goodness.
