This chutney, when used cautiously, can elevate many a chāt or shāk (vegetable dish). It’s one of my dad’s favorites, and it’s from Kāthiāwād, Gujarāt, the land of my paternal ancestors. This recipe uses a generous amount of garlic, which has been found to lower cholesterol levels,30 making it beneficial against heart disease. Healthy or not, be warned: this chutney is pungen
