Rāitā is a cooling yogurt condiment that pairs particularly well with rich dishes, such as Mattar Tofu. This variation follows the most popular rāitā, which is made with cucumber. Adding mint makes it even more refreshing, and chāt masālā increases its tanginess.
Stir all the ingredients together in a serving bowl until well combined. Serve immediately if cold, or store in the refrigerator to chill before serving.
