  • 2 eggs
  • 8 slices home-made type white bread (preferably slightly stale)
  • 2 Mozzarella cheeses

Method

Beat the eggs on a plate with a little salt and pepper. Soak the bread, cut in three-inch rounds, in the egg on one side only for about ten minutes. Shake off the surplus egg.

Cut the Mozzarella into rounds a quarter of an inch thick. Make thick sandwiches with the cheese and the soaked bread, eggy side out, and fasten with toothpicks. Deep fry in olive oil or fry carefully and not too
