  • 8 oz self-raising flour
  • 1 teaspoon salt
  • water

Method

Sift the flour and salt into a bowl and mix with water to make a dough. Shape the dough into balls the size of a walnut. A good way of doing this is in the floured palm of your hand. Put in a steamer and steam exactly 20 minutes. Do not remove the lid during cooking time or the dumplings will spoil, and remember that dumplings are like soufflés: they will not wait.
