  • 2 good uncooked kippers — these must be fresh, undyed, old-fashioned kippers, not frozen or wrapped

Skin and bone the uncooked kippers; this is quite easy if they are fresh and juicy. Cut them into small squares, and cover with oil and the juice of half the lemon while you prepare the other ingredients. Put a dressing of oil and lemon, salt and pepper on the potatoes.
