  • 2 good uncooked kippers — these must be fresh, undyed, old-fashioned kippers, not frozen or wrapped

Method

Skin and bone the uncooked kippers; this is quite easy if they are fresh and juicy. Cut them into small squares, and cover with oil and the juice of half the lemon while you prepare the other ingredients. Put a dressing of oil and lemon, salt and pepper on the potatoes. Mix the onion and green pepper with the kipper. Serve the kipper salad sprinkled with parsley and the potato salad sprinkled w
