For the Pudding

  • 8 oz self-raising flour
  • 4 oz shredded beef suet
  • salt

Method

Trim the meat and cut it into neat pieces. Skin, core, and slice the kidneys. Roll meat and kidney in seasoned flour. Add onion and mushrooms (if liked). Make the pastry by mixing suet, flour and salt with a little cold water. Roll it out and, keeping a piece for the lid, line a greased pudding basin.
