Method

Soak the pork, overnight if necessary. Put it in a large saucepan, cover with cold water and bring to the boil. In the meantime prepare the vegetables. Add them and the herbs to the pork and simmer for two hours, covered. Remove the vegetables and add the split peas to the water; taste for salt and simmer until the peas are cooked, about one hour.
